Breakfast cake and milkshake (Soaked whole grains! Probiotics! Fruit!)

I wanted to share these recipes last week, but I didn't get the chance, so I'm going to post them today! It's a bonus post, since I already posted Make-ahead Monday today. Don't worry, I won't charge you any extra! :)

This recipe is adapted from the recipes I found here. I know it sounds terribly unhealthy to have cake and milkshakes for breakfast, but trust me that these recipes are both tasty and healthy!

Of course, if the name's just too much for you, you can call it soaked baked oatmeal with a probiotic protein smoothie. But that just doesn't sound as fun, does it? It's true, though. This breakfast contains a healthy dose of protein, probiotics, fruit, and whole grains! Not bad, eh?

Breakfast Cake (also known as baked oatmeal)


12-24 hours ahead of time, mix in a large bowl:

6 cups rolled oats
1 cup oil or melted butter
1 cup water
1 cup milk kefir
1/2 cup maple syrup (you can also use honey or just plain sugar)

The next morning:
Preheat the oven to 350 F, and then add:

4 eggs
4 tsp. baking powder
1 tsp salt
1 tsp cinnamon
1 Tablespoon vanilla
put into a greased 9x13 inch pan, smooth it out and bake for approximately 40 minutes, until it starts to brown around the edges.

Slice, butter, and enjoy! It is a little crumbly, so slice with care!

This recipe freezes really well, by the way!

Breakfast Milkshake (also known as probiotic protein smoothie)

1 cup milk kefir (you could also use milk)
1/4 cup peanut butter
1 Tablespoon cocoa powder
1 frozen banana

whir it all up in a blender, and you've got a yummy, filling breakfast or snack!
